Description

If you’re craving a quick dessert idea that hits the sweet spot between nostalgic and indulgent, these Soft and Chewy Fluffernutter Cookies deliver. They’re made with creamy peanut butter, gooey marshmallow fluff, and loaded with peanut butter chips for the perfect combo of chewy, soft, and melty. Great for quick breakfast treats, bake sale ideas, or fun snack recipes for kids, this easy recipe turns pantry staples into unforgettable cookie goodness.

Ingredients

1/2 cup unsalted butter (softened)

1/2 cup brown sugar (packed)

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup creamy peanut butter

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup peanut butter chips

3/4 cup marshmallow fluff

Flaky sea salt for topping (optional)

Instructions

1. In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.

2. Add the peanut butter and beat again until smooth and fully combined.

3. Mix in the egg and vanilla extract. Scrape down the sides of the bowl to blend thoroughly.

4. Stir in flour, baking soda, and salt until just combined. Do not overmix.

5. Fold in the peanut butter chips gently with a spatula.

6. Add dollops of marshmallow fluff and swirl it lightly into the dough. Do not fully mix it in.

7. Scoop dough into 2-tablespoon-sized balls and place them on a parchment-lined baking sheet.

8. Bake at 350°F (175°C) for 10–11 minutes or until edges are golden and centers look just set.

9. Remove from oven and sprinkle with flaky sea salt while warm.

10. Let cool on the baking tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overmix the marshmallow fluff—it should be swirled, not blended in.

For extra peanut flavor, drizzle with melted peanut butter after baking.

Let the cookies cool fully before storing to preserve their texture.
