Ingredients

1 cup yellow cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

2 tablespoons granulated sugar

1 1/4 cups buttermilk

2 large eggs

1/4 cup unsalted butter, melted

1 1/2 cups shredded sharp cheddar cheese

1/2 cup finely diced fresh jalapeño (about 2 medium, seeds removed for less heat)

1 cup corn kernels (fresh, frozen, or canned)

2 tablespoons chopped fresh cilantro


Instructions

1. In a large bowl, whisk together yellow cornmeal, all-purpose flour, baking powder, salt, and granulated sugar.

2. In a separate bowl, whisk buttermilk, eggs, and melted butter (make sure it’s cooled slightly).

3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

4. Fold in shredded cheddar, diced jalapeño, corn kernels, and chopped cilantro.

5. Preheat your waffle iron and lightly grease it.

6. Add about 1/2 to 2/3 cup of batter per waffle, depending on your iron.

7. Cook 4–5 minutes until waffles are golden and crisp.

8. Remove waffles, serve hot, and top with more cilantro or sliced jalapeños if desired.

Notes

For more spice, keep some jalapeño seeds or add a pinch of cayenne.

To make ahead, mix dry and wet ingredients separately and combine just before cooking.

Store leftover waffles in the fridge for up to 3 days or freeze for up to 2 months.
