These Spicy Salmon Rice Bowls are a fresh, flavor-packed easy recipe that turns simple ingredients into one of my favorite quick dinner ideas. With tender glazed salmon, fluffy rice, crisp vegetables, and a creamy spicy drizzle, this bowl is perfect for busy weeknights, healthy snack meal prep, easy dinner planning, and everyday food ideas when I want something colorful, satisfying, and seriously delicious.
Ingredients
1 cup jasmine rice, uncooked
1 1/2 cups water
1 lb salmon, skin removed and cut into cubes
2 tablespoons soy sauce
1 tablespoon honey
1 1/2 tablespoons sriracha
1 teaspoon sesame oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/2 cucumber, thinly sliced
1 cup shredded carrots
1 cup shelled edamame, cooked
1 avocado, sliced
1/3 cup mayonnaise
1 tablespoon lime juice
2 tablespoons green onions, sliced
1 tablespoon sesame seeds
Instructions
1. Rinse the jasmine rice, then cook it with the water according to package directions until tender and fluffy.
2. In a medium bowl, whisk together the soy sauce, honey, 1 tablespoon of the sriracha, sesame oil, garlic, and ginger.
3. Add the salmon cubes to the bowl and toss gently until evenly coated.
4. Arrange the salmon on a parchment-lined baking sheet and bake at 400°F for 10 to 12 minutes, or until cooked through and lightly caramelized on the edges.
5. In a small bowl, stir together the mayonnaise, remaining 1/2 tablespoon sriracha, and lime juice to make the creamy drizzle.
6. Divide the cooked rice among 4 bowls.
7. Top each bowl with salmon, cucumber, carrots, edamame, and avocado.
8. Drizzle the sauce over the bowls, then finish with green onions and sesame seeds before serving.
Notes
Do not overcook the salmon, or it can turn dry instead of staying tender and glossy.
