Ingredients

1 lb ribeye steak

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/2 cup mixed olives

1/2 cup canned kidney beans, drained and rinsed

1/2 cup canned butter beans, drained and rinsed

4 cups mixed salad greens

1/4 cup feta cheese, crumbled

2 tbsp olive oil

1/2 cup fresh parsley, finely chopped

2 tbsp fresh oregano, finely chopped

3 garlic cloves, minced

1/2 tsp red pepper flakes

1/3 cup olive oil

2 tbsp red wine vinegar

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. In a small bowl, combine parsley, oregano, garlic, red pepper flakes, olive oil, red wine vinegar, salt, and black pepper. Stir well and let sit at room temperature to develop flavor.

2. Rub the steak with olive oil and season with salt and pepper. Heat a grill or skillet over medium-high heat. Cook steak for 4–5 minutes per side, depending on thickness and preferred doneness. Let rest 10 minutes before slicing.

3. In a large bowl, toss salad greens with cherry tomatoes, red onion, olives, kidney beans, butter beans, and feta cheese.

4. Arrange salad on serving platter or bowls. Top with sliced steak. Drizzle chimichurri over steak and serve remaining sauce on the side.

Notes

Let the steak rest after cooking to retain juices and slice cleanly.

Chimichurri can be made ahead of time and refrigerated for up to 5 days.

For a lighter twist, swap steak for grilled chicken or tofu.
