Ingredients

8 oz cooked steak (such as ribeye, sirloin, or strip)

4 slices bread (sourdough or country loaf)

4 slices provolone or mozzarella cheese (or 1 cup shredded)

1 medium onion, sliced (about 1 cup caramelized)

2 tablespoons butter, softened

1 teaspoon fresh thyme or parsley, chopped (optional)

salt and black pepper, to taste


Instructions

1. Season steak with salt and pepper. Sear in a skillet over medium-high for 2–3 minutes per side, or until desired doneness. Let rest, then slice thinly against the grain.

2. Add 1/2 tablespoon butter to the same skillet. Cook sliced onions with a pinch of salt on medium-low, stirring occasionally, until deeply golden and caramelized (about 10–15 minutes). Add thyme or parsley if using.

3. Butter one side of each bread slice. On the unbuttered side, layer cheese, sliced steak, caramelized onions, more cheese, and top with the second slice of bread (buttered side out).

4. Heat a clean skillet over medium. Cook sandwiches for 3–4 minutes per side, pressing gently, until bread is golden and cheese is melted.

5. Slice and serve hot!

Notes

For extra flavor, rub the bread with a cut clove of garlic before assembling.

Use a mix of cheeses for a stretchier, more flavorful melt.
