Description

Ingredients

2 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 3/4 cups granulated sugar

4 large eggs

1 tablespoon vanilla extract

1 cup whole milk

8 ounces cream cheese, softened

1 cup powdered sugar

3 cups heavy whipping cream, cold

1 1/2 pounds fresh strawberries, hulled and sliced

6 whole strawberries for topping


Instructions

1. Preheat the oven to 350°F and grease two 8-inch round cake pans, then line the bottoms with parchment paper.

2. Whisk together the flour, baking powder, and salt in a medium bowl.

3. In a large bowl, beat the butter and granulated sugar until pale and fluffy.

4. Add the eggs one at a time, then mix in the vanilla extract.

5. Add the dry ingredients in batches, alternating with the milk, and mix just until combined.

6. Divide the batter evenly between the pans and bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean.

7. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack and cool completely.

8. Beat the cream cheese and powdered sugar until smooth.

9. In a separate bowl, whip the heavy cream to stiff peaks, then fold it into the cream cheese mixture.

10. Place one cake layer on a serving plate and spread a thick layer of cream filling over it.

11. Add a layer of sliced strawberries over the cream.

12. Place the second cake layer on top, frost the top and sides with the remaining cream, and decorate with whole strawberries.

13. Chill the cake for at least 1 hour before slicing and serving.

Notes

Be sure the cake layers are fully cooled before adding the cream filling, or the whipped mixture can soften too much and slide.
