Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon paprika

Salt and pepper, to taste

2 medium avocados, diced

1 large mango, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1/3 cup red onion, finely diced

1 large tomato, diced

1/3 cup cilantro, chopped

1/2 cup feta cheese, crumbled

Juice of 2 limes


Instructions

1. Toss the shrimp with olive oil, chili powder, paprika, salt, and pepper. Let marinate for 10 minutes.

2. Heat a grill pan or skillet over medium-high. Cook shrimp 2-3 minutes per side, until pink and opaque. Set aside to cool slightly.

3. In a large bowl, combine diced avocado, mango, red bell pepper, yellow bell pepper, red onion, tomato, and cilantro. Sprinkle with crumbled feta.

4. Add the cooked shrimp to the bowl. Squeeze lime juice over everything. Gently toss to combine.

5. Taste and adjust seasoning as needed. Serve immediately, garnished with extra cilantro or lime wedges.

For extra flavor, grill the shrimp for a subtle smoky taste.
