2 cans (13.5 oz each) coconut milk

4 cups chicken or vegetable broth

20 dumplings (fresh or frozen, any filling)

3 tablespoons Thai red curry paste

1 tablespoon fresh ginger, grated

3 cloves garlic, minced

1 large carrot, julienned

2 tablespoons fish sauce or soy sauce

1 tablespoon brown sugar

1 lime, juiced

3 green onions, thinly sliced

½ cup fresh cilantro, chopped

chili oil or sriracha, to taste (for garnish)


Instructions

1. Heat a large pot over medium heat. Add a splash of oil, then sauté the grated ginger and minced garlic for about 1 minute, until fragrant. Stir in the red curry paste and cook for 1-2 minutes to toast the spices.

2. Pour in the chicken or vegetable broth and stir to dissolve the curry paste. Add the coconut milk, fish sauce (or soy sauce), and brown sugar. Bring to a gentle simmer and let it cook for 5 minutes to marry the flavors.

3. Add the julienned carrot to the simmering soup. Carefully drop in the dumplings. Simmer gently for 7-9 minutes, or until the dumplings are cooked through and the carrots are tender.

4. Turn off the heat. Stir in the lime juice. Taste and adjust seasoning—add more fish sauce/soy sauce for salt, lime for acidity, or a touch more sugar if needed.
