Ingredients

4 cups mixed salad greens

1 orange, peeled and segmented

1/2 cup pomegranate seeds

1/2 cup walnuts, toasted

1/3 cup goat cheese, crumbled

1/2 small red onion, thinly sliced

1 cup cucumber, sliced

1 cup cherry tomatoes, halved

1/4 cup vinaigrette dressing (citrus or balsamic works best)

Instructions

1. Wash and dry all the salad greens thoroughly.

2. Peel and segment the orange; slice the cucumber and halve the cherry tomatoes.

3. Thinly slice the red onion.

4. In a large salad bowl, layer the greens as a base.

5. Arrange the cucumber, tomatoes, orange segments, and red onion on top of the greens.

6. Sprinkle the toasted walnuts, pomegranate seeds, and goat cheese over the salad.

7. Drizzle the vinaigrette over the top just before serving.

8. Gently toss the salad to combine and serve immediately.

Notes

Keep dressing and toppings separate until ready to serve to avoid soggy greens.

Substitute goat cheese with feta, blue cheese, or parmesan if desired.

Add cooked chicken or turkey for extra protein if you want to make it a main dish.
