These breakfast burritos are the kind of quick breakfast that makes busy mornings feel easy and delicious. Packed with fluffy eggs, savory sausage, crispy potatoes, melty cheddar, and fresh tomato in a warm tortilla, they are one of my favorite breakfast ideas when I need an easy recipe that also works for meal prep, brunch, or even a hearty breakfast-for-dinner moment.
Ingredients
6 large flour tortillas
8 large eggs
1 pound breakfast sausage
3 cups frozen hash browns
1 1/2 cups shredded cheddar cheese
1 cup cooked pinto beans
1 cup diced tomatoes
1/4 cup chopped cilantro
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup salsa
Instructions
1. Brown the breakfast sausage in a large skillet over medium heat, breaking it into crumbles as it cooks. Transfer to a plate when fully cooked.
2. Cook the hash browns in the same skillet until golden and crisp.
3. Whisk the eggs with salt and black pepper.
4. Melt the butter in a separate skillet and scramble the eggs over medium-low heat until just set and fluffy.
5. Warm the tortillas until soft and flexible.
6. Fill each tortilla with eggs, sausage, hash browns, cheddar cheese, pinto beans, diced tomatoes, cilantro, and a spoonful of salsa.
7. Fold in the sides, roll tightly, and serve warm.
8. Toast the burritos seam-side down in a skillet for 1 to 2 minutes per side if you want a lightly crisp outside.
Notes
Do not overcook the eggs, because soft scrambled eggs keep the burritos tender and stop the filling from tasting dry after reheating.
