Ingredients
2/3 cup unsweetened cocoa powder
3/4 cup granulated sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 1/2 cups whole milk
1/2 cup heavy cream
1 teaspoon vanilla extract
Instructions
1. In a medium saucepan, whisk together the cocoa powder, sugar, cornstarch, and salt until evenly combined.
2. Slowly pour in the whole milk and heavy cream, whisking until the mixture is smooth and no lumps remain.
3. Place the saucepan over medium heat and cook, whisking often, until the mixture thickens and lightly coats the back of a spoon.
4. Remove the pan from the heat and stir in the vanilla extract.
5. Let the mixture cool for 15 to 20 minutes, then pour it into popsicle molds.
6. Insert sticks and freeze for at least 6 hours, or until fully firm.
7. To unmold, run the outside of the molds under warm water for a few seconds and gently pull the fudgesicles out.
Notes
Do not let the chocolate mixture boil hard on the stove, or it can become grainy instead of smooth and creamy.
