3/4 teaspoon baking soda

1/2 cup unsalted butter, softened

1/2 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/2 cups frosting (cream cheese or vanilla), divided

1/4 cup mini chocolate chips or candies (for decoration)

12 orange candies or orange gel (for noses)

Assorted sprinkles (for hats and earmuffs)


Instructions

1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking soda, and salt.

3. In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

4. Beat in the egg and vanilla extract until well combined.

5. Gradually add the dry ingredients to the wet, mixing just until incorporated.

6. Roll dough into 1 1/2-inch balls and place 2 inches apart on the prepared baking sheets. Flatten gently with your hand.

7. Bake for 10–12 minutes or until edges are set but centers are soft. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

8. Spread about 2 tablespoons of frosting on the bottom of half the cookies. Top with the remaining cookies to form sandwiches.

9. Spread a thick, round layer of frosting on top of each sandwich cookie.
