Ingredients
1 lb ground beef
1 small yellow onion, diced
3 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup tomato sauce
1 1/2 cups cooked white rice
2 cups shredded cheddar cheese, divided
4 large (10-inch) flour tortillas
Sour cream, chopped fresh parsley or cilantro, diced tomatoes (for topping, optional)
Instructions
1. In a large skillet over medium-high heat, cook ground beef until browned. Drain excess fat if needed.
2. Add diced onion and sauté until soft, about 3 minutes. Stir in minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute.
3. Add tomato sauce, stir, and simmer for 3–4 minutes until thickened. Remove from heat.
4. Warm flour tortillas. Spoon about 3/4 cup cooked rice onto each tortilla, top with equal portions of the beef filling, and sprinkle each with 1/4 cup shredded cheddar cheese (reserve remaining cheese for topping).
5. Roll each burrito, folding in the sides, and place seam-side down in a greased 9×13-inch baking dish.
6. Sprinkle remaining 1 cup shredded cheddar cheese over the burritos. Bake at 375°F (190°C) for 18–22 minutes, until cheese is melted and burritos are golden.
7. Serve hot, topped with sour cream, diced tomatoes, and parsley or cilantro if desired.
Notes
Use freshly cooked rice to prevent soggy burritos.
Warm the tortillas before rolling to keep them from tearing.
For freezer burritos, assemble and freeze before baking. Bake from frozen, covered, then uncover to finish.
