2 pounds frozen spinach, thawed and well drained
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup sour cream
1/2 cup mayonnaise
2 large eggs, lightly beaten

1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg (optional)
1/2 cup shredded cheese (cheddar or Monterey Jack, for topping)

Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
2. Prepare the spinach by thawing and squeezing out all excess water.
3. In a large bowl, combine the drained spinach, 1 cup cheddar cheese, 1 cup Monterey Jack cheese, sour cream, mayonnaise, eggs, garlic powder, onion powder, salt, pepper, and nutmeg. Stir until well combined.
