This Ultimate Reuben Sandwich is a crispy, cheesy, flavor-packed easy recipe that turns simple ingredients into one of my favorite comfort food dinner ideas. With buttery toasted rye bread, tender corned beef, melted Swiss cheese, tangy sauerkraut, and creamy dressing, it makes a quick lunch, easy dinner, or satisfying food idea whenever I want something warm, hearty, and unforgettable.
Ingredients
8 slices rye bread
8 slices Swiss cheese
12 ounces corned beef, thinly sliced
1 cup sauerkraut, well drained
1/3 cup Thousand Island dressing
2 tablespoons softened butter
Instructions
1. Drain the sauerkraut very well and press out as much moisture as possible.
2. Spread butter on one side of each slice of rye bread.
3. On the unbuttered side of 4 slices, spread Thousand Island dressing.
4. Layer 1 slice of Swiss cheese, corned beef, sauerkraut, and another slice of Swiss cheese on each sandwich.
5. Top with the remaining bread slices, keeping the buttered sides facing outward.
6. Heat a skillet over medium-low heat and place the sandwiches in the pan.
7. Cook for 3 to 4 minutes per side until the bread is golden brown and crisp and the cheese is fully melted.
8. Rest for 1 minute, slice, and serve hot.
Notes
Be sure to drain the sauerkraut really well, because extra moisture is the fastest way to end up with a soggy sandwich instead of a crisp, golden Reuben.
