2 1/2 cups all-purpose flour

3 large eggs

1 1/4 cups orange soda (regular, not diet)

1 1/2 teaspoons vanilla extract

1 tablespoon orange zest

2 cups powdered sugar (for glaze)

3 to 4 tablespoons orange soda (for glaze)

1 teaspoon orange zest (for glaze)

fresh orange slices (optional, for topping)


Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.

2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

3. In another bowl, beat the unsalted butter with granulated sugar until light and fluffy, about 2–3 minutes.

4. Add the eggs, one at a time, mixing well after each addition. Stir in orange zest and vanilla extract.

5. With the mixer on low, add the flour mixture in three additions, alternating with the orange soda (begin and end with flour). Mix until just combined.

6. Pour the batter into the prepared pan, smoothing the top. Bake for 32–36 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan.

7. For the glaze, whisk together the powdered sugar, orange soda, and orange zest until smooth and pourable.

8. Drizzle the glaze over the cooled cake. Top with fresh orange slices if desired. Slice into 15 squares and serve.

Notes

Always use regular orange soda, not diet, for the right texture and sweetness.
