Description

This White Chocolate Blueberry Cheesecake is a rich and creamy dessert that feels perfect for any special occasion, holiday table, or sweet weekend baking project. With a buttery graham cracker crust, smooth white chocolate cheesecake filling, juicy blueberries, and a glossy blueberry topping, it is one of my favorite dessert recipes when I want an easy recipe that still looks impressive. It works beautifully for dessert ideas, party food ideas, holiday baking, and make-ahead treats that slice like a dream.

Ingredients

1 3/4 cups graham cracker crumbs

1/4 cup granulated sugar

6 tablespoons unsalted butter, melted

24 ounces cream cheese, softened

3/4 cup granulated sugar

1/2 cup sour cream

8 ounces white chocolate, melted and slightly cooled

1 teaspoon vanilla extract

3 large eggs

1 1/2 cups fresh blueberries

1 cup blueberry preserves or thick blueberry sauce

1/2 cup fresh blueberries, for topping

1/2 cup heavy cream, whipped, optional

2 tablespoons white chocolate shavings, optional

Instructions

1. Preheat the oven to 325°F and grease a 9-inch springform pan.

2. Mix the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl until evenly combined.

3. Press the crust mixture firmly into the bottom of the prepared pan.

4. Bake the crust for 8 to 10 minutes, then let it cool.

5. Beat the softened cream cheese until smooth in a large bowl.

6. Add 3/4 cup sugar and mix until creamy.

7. Blend in the sour cream, melted white chocolate, and vanilla extract until smooth.

8. Add the eggs one at a time, mixing on low speed just until combined.

9. Gently fold in 1 1/2 cups fresh blueberries.

10. Pour the filling over the cooled crust and smooth the top.

11. Bake for 55 to 70 minutes, until the edges are set and the center still jiggles slightly.

12. Turn off the oven, crack the door open, and let the cheesecake rest inside for 1 hour.

13. Remove the cheesecake and cool it completely at room temperature.

14. Refrigerate for at least 6 hours or overnight.

15. Spoon the blueberry preserves or blueberry sauce over the chilled cheesecake.

16. Top with the extra blueberries, whipped cream, and white chocolate shavings before serving.

Notes

Do not overmix the batter once the eggs are added, because too much air can cause the cheesecake to crack and bake up less smoothly.
