Ingredients

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup brown sugar

1/4 cup granulated sugar

1 large egg

1/4 cup pure maple syrup

1 teaspoon vanilla extract

8 ounces white chocolate, melted

1 teaspoon flaky sea salt, optional


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking soda, and salt.

3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy.

4. Add the egg, maple syrup, and vanilla extract, then mix until smooth.

5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Scoop the dough into evenly sized balls and place them on the prepared baking sheets, leaving space between each one.

7. Bake for 10 to 12 minutes, until the edges are set and the centers still look slightly soft.

8. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

9. Dip half of each cooled cookie into the melted white chocolate and place them on parchment paper.

10. Sprinkle with flaky sea salt if using, then let the chocolate set before serving.

Notes

Do not overbake the cookies, because taking them out while the centers still look slightly soft is what keeps them chewy after cooling.
