This Creamy Pumpkin Tiramisu is a no-bake, easy recipe that layers rich pumpkin mascarpone cream with coffee-soaked ladyfingers and a light whipped topping. Ingredients
16 oz mascarpone cheese
1 cup pumpkin puree
1 1/2 cups heavy whipping cream
3/4 cup granulated sugar
1 tsp vanilla extract
2 tsp pumpkin pie spice
1 1/2 cups espresso or strong coffee, cooled
36 ladyfingers
unsweetened cocoa powder, for dusting
Instructions
1. In a chilled bowl, whip 1 1/2 cups of heavy whipping cream until stiff peaks form. Set aside.
2. In a separate bowl, beat together 16 oz mascarpone cheese, 1 cup pumpkin puree, 3/4 cup sugar, 1 tsp vanilla extract, and 2 tsp pumpkin pie spice until smooth.
3. Gently fold the whipped cream into the mascarpone-pumpkin mixture until fully incorporated. Do not overmix.
4. Pour 1 1/2 cups of cooled espresso or coffee into a shallow dish. Quickly dip each ladyfinger (about 2 seconds per side).
5. Layer half of the dipped ladyfingers in a 9×9-inch dish. Spread half the cream mixture on top. Repeat with remaining ladyfingers and cream.
6. Cover and refrigerate for at least 6 hours or overnight.
7. Before serving, dust the top with unsweetened cocoa powder. Slice and enjoy chilled.
Notes
For best texture, use crispy (not soft) ladyfingers.
This dessert is best when chilled overnight.
Add a splash of coffee liqueur to the espresso for a boozy twist.
